Who said salad can’t taste as great as a cookie

Every day I tell myself that I am going to start eating healthier, but then I see a cookie or pizza and lose my 5 hours of attempted healthy eating. A successful 5 hours is definitely not an accomplishment, so I forced myself to buy veggies and to start eating salads. Well the veggies were in my fridge for a few days before I actually had the willpower to make something besides noodles. I love my veggies and I continuously get excited when I see fresh vegetables, but since I am in college, I unfortunately don’t see them that often. Therefore, I had to push myself to make an extremely delicious salad that would trump the taste of all the unhealthy food.

Here goes the lovely recipe!

Ingredients:

  • Red cabbage
  • 4 mushrooms
  • Lettuce
  • Spinach
  • ¼ cucumber diced
  • 5 kalamata olives
  • 1 carrot
  • 10 baby shrimps
  • 1 tsp garlic
  • ½ tsp red pepper flakes
  • 1 tsp of lemon juice
  • ¼ tsp ground cumin
  • Salt and pepper to taste

 

Method:

Cut the cabbage and carrots into very thin slices. Add them to a bowl with lettuce and spinach. Dice the cucumbers and the olives into quarters and also add to the bowl. Chop the mushrooms and stir fry them with a little salt and pepper. Next in the same pan, and a little olive oil, and add finely chopped garlic and fry until lightly brown, then add the shrimp. Add the pepper flakes, salt pepper, cumin and lemon juice. Mix until cooked, then add to the salad, with the juices in the pan and mix the salad all together.

It is extremely easy and quick to make and tastes divine. You can also flavor the shrimp with cumin powder, curry powder and lemon for a different taste. It would also be great to add chopped red onions and to garnish with some cilantro if you have it.
